A Halloween pot pie will be a delicious & easy meal to serve to your family before your holiday festivities. It’s one of my family’s favorites and I’m sharing my semi-homemade recipe that doesn’t disappoint! I LOVE one-pot (or pie) meals that are filling, yummy AND quick! No matter what your celebrations look like this year, you can whip this up in a snap…and dress it for the season too! Using a purchased crust is how I roll…but you can certainly make your own if you wish. Grab your favorite Halloween cookie cutter too…and let’s get this pot pie in costume!
serve up a no-trick, just treat meal!
last spring i made an Easter pot pie…and thought i could do the same for this season! instead of bunnies…ghostly ghoulies have joined the party!
Here’s what you need:
1 frozen pie shell
1 refrigerated pie crust roll (for cutting)
pot pie ingredients: grab the recipe at the end of the post
ghost cookie cutter (or any favorite Halloween shape)
straw
use a cookie cutter to create the shapes for the top…
you can use a homemade crust recipe but i love keeping frozen rolls on hand for quick decorating!
use the straw to create the eyes of the ghost. i pinched the hole slightly to make it more oval shaped…
now get your pie shell and filling…
this recipe uses rotisserie chicken and frozen veggies…SO easy!
pour the filling into the crust and use a spoon to gently press the chicken mix to the edges…
once you have the filling pressed slightly flat, it’s time to embellish!
start laying the ghost shapes on top of the pie…
they should look like they’re floating around…so no need for perfection!
once you have your pie covered with ghouls…you can give them a little brush of milk or egg if you wish.
if you want to omit the milk or egg wash…just pop the spooky pie in the oven!
once it comes out…you’ve got a Halloween pot pie that’s deliciously delightful!
Halloween pot pie…it’s what’s for dinner!
grab the printable recipe~
- 1 frozen pie crust shell
- 1 sheet, frozen pie crust thawed and rolled out
- 2 Cups shredded rotisserie chicken
- 1/2 package frozen peas and carrots
- 1 can cream of chicken or mushroom soup
- 1/2 Cup milk
- 1 Cup shredded cheddar or colby jack cheese
- onion powder, salt & pepper to taste
- 1-2 fresh green onion optional, can save some for topping
- milk or egg wash optional
- In a large bowl combine the chicken, veggies, soup, milk cheese, green onion and seasonings. Pour into frozen pie shell.
- Roll out the thawed pie crust sheet and cut into shapes or into strips to create a lattice design on top of the pot pie. Lay shapes over the top or weave the strips into any pattern you like. Brush with milk or egg if desired.
- Place pie on a baking sheet to prevent any dripping. Bake at 350 for 35 minutes or until crust is golden brown. Serve with extra cheese & green onion if desired.
