Almond cookie bites are a delicious treat that will be perfect for Valentine’s Day! They’re easy to make and so yummy that they’re almost addictive! The tiny bite-size goodies are one of my family’s favorite desserts. The recipe makes a bunch so you can serve some and keep some in the freezer too. I love desserts that freeze well so I can keep them on hand for impromptu get togethers or anytime you need a sweet snack. With Happy Hearts Day approaching fast, I thought they’d be a delightful to serve or give! I’m sharing the easy recipe today and I hope you love them as much as I do! - 2 tablespoons sugar
- 2 tablespoons almond paste
- 1 beaten egg white
- Pre heat oven to 350 degrees.
- Combine almond paste, flour, salt, sugar. Cut in the chilled butter. Gently combine the unbeaten egg yolk until blended. Divide dough into six portions.
- With floured hands, roll each portion of dough into a 12 inch long rope. Keep flouring hands if sticking. Lay all six ropes side by side to make a square.
- Combine the sugar and almond paste into a crumbly mix for the topping. Brush the dough ropes with the beaten egg white and sprinkle the topping over top. Pat gently to adhere the topping to the dough.
- Cut across all the 6 rolls to create 1 inch pieces. Place on a cookie sheet (un greased) and bake for approximately 12 minutes or until lightly browned but still soft. Cool and serve. Also freezes well.
