National Banana Split Day was last Friday but if you missed it, not to worry…summer is here and that means we can enjoy the sweet and chilly treat all season long! Last week I partnered with Grand Rapids Popcorn to share some banana split inspiration to celebrate the national day. It was so much fun that I thought I’d monkey around a little more and keep going with the yummy theme! I’m so ready for summertime fun and it seems like now that school is out we’re actually busier than before. Not sure how this is happening but it makes family celebrations even more special! I’d love to share these easy treat ideas for big parties or just for making simple summertime memories! So keeping it short and sweet today…let’s go bananas!
put a twist on the banana split!

if you love a good banana split…you might enjoy it even more with the addition of popcorn in those favorite flavors!
not only is is colorful and pretty…it adds a sugary crunch to this dessert! i made this one big enough for sharing…
and to add more munchie fun to the “party” i included a banana split inspired snack mix…
craft paper cups hold the combination of popcorn, banana chips, mallows, and chocolate pearls! if you can’t find the pearls, chocolate chips work perfectly too!
i love using stickers for adding decorative touches! they’re whimsical and one of the easiest ways to embellish almost anything!
i labeled the goodies with tiny canvases & easels! so easy to create with more stickers…no artistic skills required!
banana split banana bread!
i have one of the best recipes for banana bread! i might be biased because it’s my grandmother’s recipe…but it never lasts long in my house! i decided to turn it into an ice cream “cake” by simply slicing the loaf and layering it with Neapolitan ice cream to mimic the other flavors in a traditional split…
chocolate, vanilla, & strawberry ice cream sandwiched between layers of chocolate chip banana bread…heavenly and easy too!

- 1 Cup sugar
- 2 eggs
- 3 Soft bananas
- 1/2 Cup butter, softened
- 1 teaspoon baking powder
- 1 teaspoon Bakinig soda
- 1/4 teaspoon salt
- 2 1/2 Cups flour
- 1/2 Cup water
- 1 Cup chocolate chips
- Cream together the butter and sugar.
- Add the eggs and soft banana and mix until blended
- Add the dry ingredients and mix together, then add the water and blend.
- Fold in the chocolate chips.
- Pour batter into 4 small loaf pans sprayed with oil and lined with a piece of parchment on the bottom. ( If you use two medium or one large loaf pan, you may need to adjust the baking time)
- Bake in a pre-heated 350 degree oven for 35-40 minutes or until the top is firm, slightly golden, and a pick comes out clean. Cool 10-15 minutes and remove from pan to finish cooling on a rack. Freezes well.
don’t miss the banana boat!
last year i tried a dessert with my family that was an all-time favorite to make…and eat! grilled banana boats! it’s not exactly a banana split but definitely worth making! here’s how…
with a sharp knife, split the banana lengthwise…
being careful not to go all the way through…
gently open the cut and stuff with your favorite goodies for melting…
i used chocolate chips, caramel bits and mini marshmallows…
place your banana “boat” on a piece of foil…
and wrap it up tight!
place it over a hot fire, grill, or directly over the flame of your stove…any thing to melt all the yummy stuff inside!
it might not look beautiful…but i can guarantee it tastes FABULOUS!
top with dollops of whip cream and you’ve got a delicious, campfire treat your family will remember!
