Instructions
  1. For the marinade: place pork in large zip top bag or other food safe container. Coat with the 1 T oil and sprinkle on all sides with salt. Pour the juice from the limes and oranges over the meat and place the fruit rind in with the pork. Refrigerate overnight, up to 12 hours.
  2. Pre-heat smoker to 225 degrees F with your favorite hardwood. Remove the pork from marinade and pat dry. Combine all the dry seasoning ingredients (up to bay leaf. this is for braising) . Rub some extra oil on the shoulder and coat with dry rub. Be sure to coat all sides.
  3. Place pork in the smoker and smoke for approximately 5-6 hours or until the internal temperature reaches 165 degrees.
  4. Transfer the pork to an aluminum pan and pour the remaining 1/2 C oil over top. Place bay leaves on top and cover tightly with foil. Place in pre-heated 350 oven and bake an additional 2-3 hours. The internal temperature should reach 203 degrees or until the temperature probe slides into the meat like it's sliding into butter. The time can vary and may take longer in the oven for the meat to be fork tender.
  5. Let the meat rest at least one hour before shredding. Shred the meat, removing the bone and fat or grizzle. Remove the bay leaves. Save all the liquid from the roast and let cool. Skim the fat from the top of the saved drippings. You can use this liquid to moisten the shredded meat before serving if necessary.
  6. Optional step: You can crisp up the shredded meat in a cast iron skillet by frying it in some of the leftover drippings. Heat some of the drippings into the pan and fry shredded pork for 2-3 minutes flipping the pieces to ensure even browning .
  7. After shredding or crisping, serve the meat immediately in tacos, burritos or nachos.

  1. Chop and sautee the onion in butter until soft. Cool slightly. Carefully mix onion and all other ingredients into the ground turkey until just blended, being careful not to overwork the meat.
  2. Form into patties. Brush a non-stick pan with olive oil. Heat pan over medium until hot. Place patties on hot pan and fry over med-hot heat 4-6 minutes without moving the burgers. Bottoms should have a dark, golden crust. Flip and cook another 4-6 minutes. (cook times can vary depending on size and thickness of burger) Continue frying until thermometer reads 165 and remove immediately from heat.
  3. Serve with sesame buns, lettuce, cheese, spicy ketchup (such as Maya Kaimal brand) and sauteed curry onions-(recipe following)
  4. Make onions by halving a sweet onion and slice in thick half-moon pieces. Melt 1-2 T butter in nonstick skillet over medium heat. Add onions and sautee 1-2 minutes. Reduce heat, sprinkle with 1/4- 1/2 teaspoon curry powder and sautee slow until onions are soft and slightly caramelized. Can make these ahead and reheat just before topping your burgers.

  1. Heat a non-stick skillet lightly brushed with olive oil. Sear both sides of the salmon, remove from heat but leave in pan.
  2. Pre-heat the oven to 400 degrees. Mix the olive oil, garlic, dried herbs, and juice of half the lemon.
  3. Spoon the herb mixture over the entire fillet. Thinly slice the remaining lemon and place slices over the top of the salmon. Top with half the fresh dill.
  4. Place skillet directly in the oven and bake for 15-20 minutes or until the salmon if opaque and flaky. Garnish with fresh dill and serve.
  5. Optional baking: if you use a very large fillet, you can bake in a sheet pan without searing first. Just double the herb mixture for a larger fish and increase the bake time 10-15 minutes depending on the size and thickness of the fillet.

  1. In a large bowl combine the chicken, veggies, soup, milk cheese, green onion and seasonings. Pour into frozen pie shell.
  2. Roll out the thawed pie crust sheet and cut into shapes or into strips to create a lattice design on top of the pot pie. Lay shapes over the top or weave the strips into any pattern you like. Brush with milk or egg if desired.

  1. Cut the baguettes into quarters and slice. Place bread on a parchment lined baking sheet. Add cheese slices to half of the slices and toast all in a 300 degree oven (or toaster oven) until cheese begins to melt and plain halves are slightly golden. Add ham, turn the oven off and and place baking sheet back in the oven to let the meat warm while you prepare the slaw. Turning the oven off will allow the ham to warm up without the bread getting too brown. (You can also just bake full baguettes in the oven until crispy. Slice and then assemble.)
  2. While the ham warms, add the coleslaw mix to a medium bowl along with the cabbage and cilantro. add the mayo and stir until coated. Add sriracha sauce one tablespoon at a time until you reach your desired level of spice. Pile mix on top of warm sandwiches. Top with plain half of bread and enjoy!
