summer touches on a simple table is all you need to serve up this summer meal.
i like a minimal table, but that doesn’t mean it can’t look beautiful and still be functional…
clustering a pitcher and glasses together on a server makes the table appear fuller and guests can grab a drink while mingling before gathering at the table!
i love adding wicker and other natural elements to a summer table. place mats like these are inexpensive & easy to find and i love how they bring texture to each setting!
paper utensil holders look fabulous on this super simple plate…and i tucked in some faux grasses for a fun detail!
salad fixins…
on to the meal! I plated up the cumin chicken salad in individual bowls…but a tray filled with the goods to make sandwiches is handy at the opposite end of the table.
a tiered server adds height and is a fun option for holding all the toppings…
just pile in the bread of choice, toppings and greens! i used little ciabatta buns, tomato, pickle, arugula & sprouts!
a bunch of parsley from the garden was also at handy reach. i served it in a planter…but it’s actually just tucked inside.
a tiny glass filled with water holds the sprigs and keeps them from wilting…
party tip:
if you serve greens or herbs in unconventional containers like pots and planters, wash them well and line them with parchment to keep the food clean. you can also tuck a tiny vase or glass inside to keep cut herbs fresh and easy for guests to grab. they make a pretty table decoration too!
toppings at easy reach allows everyone to customize their meal. this recipe is so flavorful and fresh no matter how you enjoy it!
extra sips & summer decor…
some light vino is lovely to sip on during or after the meal. my patio “buffet” (aka garage sale dresser) is a lovely place to create a self-serve station…
casual details like simple garden blooms add color and freshness to this simplest of setups!
wicker lanterns filled with twinkle lights and sea side elements add the summer vibes!
sometimes it’s the littlest details that shine brightest…
and finally a sweet note…a bowl of ice keeps mochi ice cream cool! a fun way to serve chilly desserts on a summer day!

grab the printable recipe~
- 1 pound rotisserie chicken, cubed
- 1/2 cup mayo
- 2-3 teaspoons spicy mustard to taste
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1 large bell pepper diced
- salt and pepper to taste
- 4 buns
- tomato, pickle, baby arugula, spinach, sprouts optional toppings for sandwiches
- roasted cashews or almonds for toppings as salad
- Remove the skin from the roasted chicken and dice the meat. Place in medium bowl and set aside.
- Dice the bell pepper and add to the chicken.
- Combine the mayo, mustard, and seasonings and stir together. Add to the chicken and pepper and blend well. Chill in refrigerator before serving.
- Serve alone as a salad or make sandwiches with your favorite toppings.
