Instructions
  1. Chop and sautee the onion in butter until soft. Cool slightly. Carefully mix onion and all other ingredients into the ground turkey until just blended, being careful not to overwork the meat.
  2. Form into patties. Brush a non-stick pan with olive oil. Heat pan over medium until hot. Place patties on hot pan and fry over med-hot heat 4-6 minutes without moving the burgers. Bottoms should have a dark, golden crust. Flip and cook another 4-6 minutes. (cook times can vary depending on size and thickness of burger) Continue frying until thermometer reads 165 and remove immediately from heat.
  3. Serve with sesame buns, lettuce, cheese, spicy ketchup (such as Maya Kaimal brand) and sauteed curry onions-(recipe following)
  4. Make onions by halving a sweet onion and slice in thick half-moon pieces. Melt 1-2 T butter in nonstick skillet over medium heat. Add onions and sautee 1-2 minutes. Reduce heat, sprinkle with 1/4- 1/2 teaspoon curry powder and sautee slow until onions are soft and slightly caramelized. Can make these ahead and reheat just before topping your burgers.

Instructions
  1. Cream together the butter, brown sugar, egg, and vanilla. Add the flour, baking powder, and salt. Mix well.
  2. In a microwave safe bowl melt the chocolate and let cool slightly. Mix in the baking soda.
  3. Remove 2/3 of the cookie dough to a floured surface. Blend the chocolate and soda mixture into the remaining 1/3 of the dough.
  4. Roll out 1/2 of the light dough into a 16" x 4" strip. Shape 1/2 of the chocolate dough into a 16" long snake and place in the center of the light dough. Mold the light dough around the chocolate and wrap in foil. Repeat with the remaining dough and chill for 2 hours or up to 5 days.
  5. Cut the dough into slices approximately 1/4" thick. Put two slices together (dampen the touching edges). Pinch the corners to create "ears". Place two chocolate chips in the center of the dark dough to create eyes and a whole cashew in the center for the beak.
  6. Bake at 350 degrees for 8-12 minutes or until edges are very slightly browned. Check often. Cool completely and store in airtight container.

Instructions
  1. In a bowl combine the flour, sugar, salt and baking powder. Cut in the butter with a pastry knife until crumbly. Stir in the milk with a fork and stir until a soft dough forms. You may need to add more milk. Once it resembles dough, you can use your hands to mix it together, then turn out on a floured surface and pat or roll out to 3/4" thick and cut out rounds with a 2" cutter.
  2. Place the biscuit rounds on an un-greased baking sheet and cover with plastic wrap. Refrigerate for 30 minutes or up to 24 hours.
  3. Pre-heat the oven to 375 degrees. Brush the tops of the biscuits with the beaten egg. Bake for 14-16 minutes or until slightly golden.
  4. Split and serve with fresh fruit and creme Fraiche
  5. Creme Fraiche: in a glass jar combine 2 cups heavy cream, 2 tablespoons fresh squeezed lemon juice. Let this stand at room temperature for 8-12 hours in the loosely covered jar. Once it has begun to thicken, tightly cover the jar and refrigerate until ready to serve. Can add 2 tablespoons mild honey before serving, optional. (mason jars with screw lids make a nice container to make the creme)
  6. Optional additions to the berry shortcakes can be fruit curds, jams or jellies, ice cream or whipped toppings.

Instructions
  1. Pre-heat the oven to 350 degrees. In the bowl of a mixer cream the butter and sugar until smooth, approximately 3 minutes
  2. Beat in the extracts and egg
  3. In a separate bowl combine baking powder with flour and add a little at a time to the wet ingredients. The dough will be very stiff. Do not chill the dough. Divide it into workable batches, roll out on a floured surface to approximately 1/4" thick round. cut with cookie cutters.
  4. Bake at 350 for 6-8 minutes. Let cool on the cookie sheet until firm enough to transfer to a cooling rack. Frost and serve or freeze un-frosted cookies.
