Ingredients
- 3 Tablespoons butter
- 1 Cup cubed ham can also use sausage, shrimp or mushrooms
- 1/4 Cup green onion, chopped
- 12 eggs beaten
- 2 Tablespoons butter
- 2 Tablespoons flour
- 1/8 teaspoon pepper
- 2 Cups milk
- 1 Cup shredded cheese
- 4 Tablespoons melted butter
- 2 1/4 Cups bread cubes
- 1/8 teaspoon paprika

Instructions
- Melt the first 3 Tablespoons butter in large skillet. Add the meat or mushrooms (or combination) and brown, adding the green onions at the end.
- Add the 12 beaten eggs to the meat mixture and scramble. Set aside. (mixture will appear moderately moist)
- Make the sauce by melting the 2 Tablespoons butter and whisk in the 2 Tablespoons of flour and pepper.
- Add 2 Cups milk and whisk over med/low heat until slightly thickened. Add the cheese and stir until melted.
- Pour sauce over the scrambled egg mixture and gently fold together. Pour into a greased 9 x 13 casserole dish.
- Melt the remaining 4 Tablespoons butter in a large pan and toss in the bread cubes and paprika. Stir until bread is coated with the butter and then top the casserole with the croutons.
- Cover and refrigerate several hours or overnight.
- Let casserole come to room temperature and then bake at 350 degrees uncovered for 30 minutes.
