Instructions
  1. Lay bacon pieces on a sprayed and foil lined baking sheet. Mix the sriracha sauce and brown sugar together and spread a thin layer on both sides of the bacon. Bake at 375 degrees for 15-20 minutes or until cooked but not too crispy. Can serve warm or cold.

  1. Cut the baguettes into quarters and slice. Place bread on a parchment lined baking sheet. Add cheese slices to half of the slices and toast all in a 300 degree oven (or toaster oven) until cheese begins to melt and plain halves are slightly golden. Add ham, turn the oven off and and place baking sheet back in the oven to let the meat warm while you prepare the slaw. Turning the oven off will allow the ham to warm up without the bread getting too brown. (You can also just bake full baguettes in the oven until crispy. Slice and then assemble.)
  2. While the ham warms, add the coleslaw mix to a medium bowl along with the cabbage and cilantro. add the mayo and stir until coated. Add sriracha sauce one tablespoon at a time until you reach your desired level of spice. Pile mix on top of warm sandwiches. Top with plain half of bread and enjoy!
