I’m a little obsessed with peaches these days…after having so much fun with the cobbler, and having plenty of peaches left-over, my son and I decided to carry on with the theme and enjoyed another summertime treat–popsicles! I have to say it was a really easy and fun snack to make…for kids and adults alike! The great thing is you can also make healthy versions of these frozen goodies and you don’t really need a recipe either! I searched around on line for some yummy inspiration and while I found plenty that looked beautiful and sounded delicious, I also came to the conclusion that we could easily make up our own tasty versions! After a little rummaging around in the fridge we combined what we had, took some guidance from several recipes, and came up with our own frozen concoctions! See what we froze up…just in time to cool off on a warm summer day!
get peachy with popsicles!
getting started is easy…all you need is a popsicle mold (though you can use small paper cups or baking cups), popsicle sticks, and any liquid you’d like to freeze! i found these adorable polka dot popcicle sticks and the napkins were too cute to resist…
since we’re on a peach kick…we used plenty so we’d get some frozen chunks of fruit in our icy treats!
we tried three different kinds of popsicles…our first set–vanilla maple peach! ingredients included vanilla almond milk and a touch of maple syrup poured over the fresh peach chunks–can’t wait to try this one! we didn’t really measure much…we just poured in a cup of milk or so and added the syrup until we liked how it tasted!
next, tropical berry peach and strawberry lemonade! so easy…made with fruit and bottled juice!
once you pour your liquid in…carefully place it in the freezer until it’s set up enough to pop the stick in! let them freeze overnight or at least 10 hours. and once they’re frozen, run the mold under some warm water until the popsicles pull out freely!
they melt pretty fast so i like to serve them on a tray filled with ice…i particularly love aluminum trays because they get really cold! you could also chill your tray in the fridge to keep your icy treats icy for as long as possible!
now to serve them up to some discriminating tasters…
along with some peachy accompaniments…vanilla peach sugar cookies and peach tea!
what was the favorite?
tropical berry peach came in first with vanilla maple peach and strawberry lemonade a tie for second! for creamier vanilla popsicles you could add some cream & sugar to the almond milk…it will change the healthiness factor but creates a treat more like ice cream! there’s no rules here–so go ahead and concoct some sweet experiments!
