Pink pool party s’mores are the perfect way to celebrate summer even if you don’t have a pool! We might be missing a poolside patio at our house, but it won’t stop me from having some splish-splashy fun…if just in food form! Recently I experimented with a favorite treat, giving it a seasonal twist and serving it in pool-party fashion. Simple party supplies helped me to make easy s’mores cups for a self-serve treat, perfect for a girl’s night in! And to give these gooey snacks an unexpected flavor I made white chocolate berry bark to stand in for traditional chocolate! Let me share how easy it is, and the simple summertime decorations to make it feel like a poolside soiree!

a simple plate of fixin’s and some whimsical napkins help to get this snack summer-ready…

speaking of the s’mores…pink swirly mallows, cookies & white chocolate bark (we’ll get to that in a moment) are all sweetly tucked into simple cupcake liners!
i couldn’t resist the patterns on the liners which were the inspiration!
and since a pool floatie was one of the designs…what better than a miniature version to hold some pretty blooms! a drink float makes a perfect summer centerpiece!
white chocolate berry bark
making chocolate bark isn’t anything new…but it’s super fun to customize your treats with something unexpected! now let’s make these s’mores taste like summer…
what you’ll need:
white chocolate chips
food coloring
toothpicks
wax or parchment paper
mini mallows
freeze dried berries
sprinkles
melt your chocolate in a microwave safe bowl in 30 second intervals stirring between each. when the chips are melted & smooth, add a touch of color to tint the mix…
spread out in a thin layer on your parchment. then dot with more food color and using the toothpick, give it some swirls!
top with mini mallows, sprinkles and freeze dried fruit! let set until cool and firm.
party tip:
the freeze dried fruit will eventually take on some moisture so it’s best to serve right away if you want them to stay crisp. once the bark is melted in the s’more you won’t notice it’s not crispy if you store them before use. the flavor remains tart & delicious, but you can omit the freeze dried fruit entirely and substitute with candy or cookie pieces if desired.
once the chocolate is set (which won’t take long) use a large, sharp knife to cut it…
no need for perfection, if some edges break a bit, that’s just part of the homemade charm!
