Flatbread as a pizza crust is one of my family’s favorites. It’s so flavorful, crispy, and wonderful for individual servings. flatbread pizza is so great because you can use up whatever you have in your kitchen and turn it into something fun!
autumn flavors like pumpkin pasta sauce and jack-o-lantern sweet potatoes make it special for the holiday!
here’s what i used for this pizza:
sliced & roasted sweet potatoes
onion & peppers chopped and softened in butter
salami
olives
cherry tomatoes
crumbled feta
herbs
let’s begin by creating the jack-o-lanterns! merely peel & slice your potatoes and create simple cut-out faces with a sharp knife…
brush with olive oil and sprinkle with s&p or any favorite seasoning…
roasting tip:
roast in a 425 degree oven about 6-8 minutes or until just tender. they don’t need to be completely roasted as they will bake additionally on top of the pizza.
while the potatoes roast, prepare your flatbread by spreading a thin layer of pasta sauce on top…
i added a salami “moon” by freehand cutting a round slice with kitchen shears.
then add your other toppings and the sweet potato “pumpkin patch”!
roast your pizza for an additional 10 minutes or until the flatbread is crisped to your desire. (roast times may vary)
now it’s time to add the fresh herbs…
tiny oregano leaves make darling stems for the jack-o-lanterns and pumpkins…
platter up the pizza up and let everyone dig in!
it’s as simple and delicious as that!!
