Ingredients

pound
rotisserie chicken, cubed
1/2
cup
mayo
2-3
teaspoons
spicy mustard
to taste
1
teaspoon
cumin
1/2
teaspoon
chili powder
1
large bell pepper
diced
salt and pepper
to taste
4
buns
tomato, pickle, baby arugula, spinach, sprouts
optional toppings for sandwiches
roasted cashews or almonds
for toppings as salad
Instructions
Remove the skin from the roasted chicken and dice the meat. Place in medium bowl and set aside.
Dice the bell pepper and add to the chicken.
Combine the mayo, mustard, and seasonings and stir together. Add to the chicken and pepper and blend well. Chill in refrigerator before serving.
Serve alone as a salad or make sandwiches with your favorite toppings.
