Serving St. Patrick’s Day treats is one of the easiest ways to celebrate this holiday with my family! It doesn’t have to be anything crazy good, just a little dressed up snack that can bring some festivity to the day. And don’t think there’s not enough time to surprise your favorite leprechauns…I’ve got three easy ideas you can whip up in no-time! You might remember that one of our traditions is to make “lucky cupcakes” each holiday…and I’m sharing the tutorial for this year’s treat too! It’s time to get the shenanigans started…
St. Patrick’s Day treats…last-minute & easy!
idea #1…dressed up delights!
the easiest way to serve up a holiday treat is to dress up store bought goodies…
mini cupcakes are extra sweet with a topping of shamrocks…
it was easy to decorate the little St. Patrick’s Day treats by plucking the greens from an economy garland and merely sticking the stem in the icing!
i used some extra leaves to top another favorite snack…and a tiny figurine tucked in the middle adds a fun holiday touch!
idea #2…cookie cutter crunchies!
what you’ll need:
flour tortillas, plain or spinach
olive oil
season salt
shamrock cookie cutter
if you have a holiday cookie cutter you can create shamrock “chips” that are festive & healthy! just grab a tortilla and cut out your shapes…
you can add some flavor with olive oil and your favorite spice mix!
use a pastry brush to coat the tops with olive oil…
and sprinkle them lightly with a salty mix!
i used a garlic mix…but you really could use any flavor-enhancing salts or rubs that suit your taste!
line them up on a cookie sheet and bake at 350 until they’re browned & crispy…about 5-8 minutes! serve them with some green guac for a delicious snack! you could use spinach tortillas too…but this is what i had in my pantry!
idea # 3…over the rainbow cupcakes!
what you’ll need:
icing…homemade or purchased white frosting
food color paste
sandwich baggies
plastic wrap
disposable pastry bag
mini cupcakes
this year i wanted to try my hand at rainbow icing for our “lucky cupcakes”! and guess what? it’s really easy! inspired by the darling napkins, i mixed up 4 colors for frosting…
one recipe of my almond-vanilla icing (grab the recipe at the end of the post) made more than double what you see…about enough to ice 12-16 mini cupcakes with a generous dollop! just use food coloring to create your color palette!
if you don’t have a ton of decorating supplies don’t worry…neither do i! just fill plain sandwich baggies with each color…
snip off one corner of the baggie…
this will give you a make-shift pastry bag!
on a piece of plastic wrap, squeeze out a 3-4 inch strip of each color near the edge of the plastic…
gently wrap and roll the plastic around the icing to form a tube…
place the plastic wrapped icing down inside a disposable pastry bag…and pipe!
you could use a decorative pipping tip, but i went plain-and-simple without one!
serve them up!
i simply piled them on a stand along side the “matching” napkins…
little leprechaun confetti was the perfect size for tiny cake toppers!
festive little string lights hanging above make this simple display of St. Patrick’s Day treats look super fun!

grab the easy almond-vanilla icing recipe~
- 8 oz cream cheese room temp
- 1 stick butter room temp
- 1 tsp almond extract
- 1/2 tsp vanilla extract
- 4-5 c powdered sugar
- 2-3 tbsp milk
- cream together the cream cheese & butter, add in the liquid flavors.
- begin adding powdered sugar a cup at a time and milk if needed until you reach your desired thickness.
if you’re not piping cupcakes the icing may not need to be as thick. i actually used about 3-4 cups for this cake so i could make a thinner coating (and it is easier to spread on a full cake if it’s not too thick!)
