the great thing about this salad holds true for the appetizer…minimal ingredients required!
here’s what you need:
cubed seedless watermelon
baby arugula
mild Italian dressing (such as Good Seasons)
crumbled feta cheese
balsamic glaze
melon scoop
small tongs (optional)
cube your watermelon OR grab a box already cut!
party tip:
if you’re making up a large quantity, i’d recommend cutting up a whole melon. you can even use a biscuit cutter to make round shapes. i’ve done this before and it looks pretty…but the cubes are much easier, faster AND look equally as cute! if you only need a small platter, a container of pre cut melons is a little more costly but really convenient!
gather your other ingredients such as the feta…
and arugula. i like giving mine a rough chop so it’s small enough to fit inside the melon.
you can toss your arugula in a bowl with a little cheese & dressing if you wish. i like the added moisture and flavor.
with the small end of your melon scoop, gently create a tiny “bowl” in the watermelon cube…
party tip:
you can scoop all the cubes ahead of time, place on a serving tray, wrap with plastic and store in the fridge for a couple hours. this step can help with assembly time!
when you have your cubes scooped out, begin filling with the salad mixture…
keep adding the arugula with little tongs or your fingers until each cavity looks full…
i like to add a little more feta to the top…
then drizzle each with your balsamic glaze!
and watch them disappear!
