Ok, so we’ve had weather this week that makes me believe that spring is here to stay! I know that’s not entirely true…but we are well on our way to the formal entrance of the new season and I am enjoying every second of it! So to round out this springlike week, I decided to celebrate Friday by piling up a plate of summer sandwiches to kick off the weekend! I purchased some wafer thin waffle cookies for this very task…to put away for ice cream sandwiches! In the meantime they’ve been used in the St. Patrick’s Day snack that I shared last week, and plenty of regular munching…they’re really good dipped in ice cream toppings and fruit spreads! They may also find themselves on a platter of s’mores fixin’s…but this warm weather was just the right invitation to pile on the ice cream and savor some summertime joy! Who cares that it’s not really summer, or even spring for that matter…those seasons are coming and I’m ready to welcome them! So yesterday I whipped up the frozen sandwiches, wrapped them up tight, and will surprise my family with this sweet treat today when they return from school! Whether you have warm weather right now or not, defy the calendar and make an easy treat that will make you smile…
and dream of ice cream days!
i don’t know about you, but ice cream sandwiches just make me happy! such simple ingredients put together to create a frozen masterpiece! anyone can make one…and quite frankly, the gooier and sloppier the better so there’s no worries about dessert perfection here! the other wonderful thing, you can use anything you want to make ’em! pound cake, cookies, doughnuts…and on the inside the same rules apply! this time i chose waffle cookies for the “bread” to hold my sandwiches together!
and what sweet sandwich wouldn’t want to get dressed up with some sprinkles and cookie crumble? tasty additions to press into the sides of the treat!
i also decided to spread it on a little thicker with some strawberry and chocolate to ooze over the ice cream!
simple berry jam and spreadable chocolate are great choices because they’re thick enough to coat the cookie but won’t drip all over the place! slather on as much or as little as you want…
and then the frozen stuff…my boys are partial to vanilla but you can choose any flavor that your heart and taste buds desire!
and since my cookie choice is on the fragile side i needed to be careful not to break them when pressing the sandwich together. i found it much easier to flatten the softened ice cream out with a spatula first…
then just plop it between the cookies pressing gently to squish it together. if you wish, you can also sprinkle your embellishments onto the sides of your treats! the crisp cookies do soften up a bit after they sit for a minute or two…so the sandwich isn’t a crumbly mess when you devour it!
and since they’re frozen and you’d like to keep them that way…it’s a good idea to place each finished sandwich on a plate in the freezer while working on the others! you can also keep them in the freezer for a couple days if they’re in an airtight container.
and when you’re ready…pile them high and wait to see the joy!
