what i love best about this recipe is that you can keep most of the ingredients on hand in your pantry & fridge so you can whip this up quickly!
what you’ll need:
whipped goat cheese (recipe to follow)
crispy wheat crackers
blueberries
baby spring mix
Italian dressing (i love good seasons)
purchased balsamic glaze
you can make the whipped goat cheese ahead and keep it in the fridge for several days. just bring it to room temperature so it’s easier to spread onto your crackers…
gather your other toppings so you can make your own mini assembly station!
i love using a woven wheat cracker that doesn’t have any crazy flavoring to fight with the toppings.
smear on some of your whipped cheese. (you could also pipe it on if you want to get fancy)
and add the other toppings! baby greens for extra color and flavor…
since the crackers are small, i recommend giving it a rough chop…
add a light splash of a mild Italian dressing…
toss to gently coat. you don’t want it super saturated…
place a few greens on each cracker and gently press into the feta…
add a big blueberry and a drizzle of the glaze!
place them on a platter or board and serve!

easy & delicious summer flavor!

- 8 ounces plain goat cheese
- 4 ounces cream cheese
- 1 clove Garlic, minced
- 1/8-1/4 teaspoon red pepper flakes
- 1/2 lemon juiced approximately 2 T
- ground black pepper to taste
- 2 tablespoons minced fresh parsley
- In a small food processor add the cheeses, garlic, red pepper, lemon juice and black pepper. Pulse until well incorporated. Add the parsley and pulse again until blended in.
- Serve on crackers or sandwiches. Can be stored in an airtight container in the refrigerator for a few days. Bring to room temperature to make it easier to spread.
